It can be quite hard to find a lamb shoulder in the supermarket. Vacuum packed, distorted and intimidating in size the eye too happily skips past them to more attractive and manageable cuts and joints. They are an uncelebrated part of the animal, but rich with fatty seams, thick with flesh and built upon an almost cartoonish bone they have everything we crave in a joint of meat. Start to think of them in this way, and with the ease of this recipe, and you have the basis for an incredibly satisfying and cheap roast that comfortably feeds four or more people.

Given that my lamb shoulder has just gone in the oven and won’t be ready for six hours at the earliest I find myself with more than a little free time this afternoon. The seasons are going haywire in London at the moment with things unusually warm but there have been cold snaps this week as well and this particular dish is perfect as the weather starts to turn and thoughts move from shorts to overcoats and from salads to hearty soups.

Alright, I’m feeling back in the swing of things now so I thought what better than to take a comfort classic and give it a little turbo charge. The weather is closing in here in London town, the recent social calendar has been full on so it feels like time to post something that requires enough cooking to feel you’ve made an effort but ultimately something that is still easy enough to then eat with a spoon, on the couch, in your pants.

It’s been ages hasn’t it. I’m sorry. Really very terribly sorry in fact, but I’m afraid life gets in the way a bit and before you know it days turn into weeks and still you find you haven’t been able to find a second to scribble down even the simplest recipe. It’s not that I haven’t been cooking, honest. I’ve been in that kitchen boiling, frying, grilling, marinading, flambeing and chopping for all I’m worth but none of it has made it to the internet.
